Traceability

Fazer’s business areas are prepared for potential exceptional situations related to their products with the aid of exact operating instructions including, for example, a product recall plan.

Fazer Food Service secures the traceability of products by taking a sample of every product and batch. The samples are kept for two weeks in case need arises to prove the hygienic quality of the product in case it is suspected that someone has fallen ill because of the food. Deterioration of the quality of food can be caused by either bacteria or viruses.

Food legislation governs raw material sourcing. At Fazer, accepting a new raw material is a multi-phased process in which specialists from different functions take part.

During the acceptance process of a new raw material or product not only the properties of the product, but also the operating models of the supplier are studied, for example, their quality certificate and environmental programme. Traceability is part of the quality work of all our business areas and the quality chain of Finnish food production: according to food legislation, it must be possible to trace raw materials back to the supplier, e.g. the wholesale trader, and ready-made products respectively to the places where they are sold. Collaboration with suppliers and other partners makes it possible to trace the origins even further.

In Finland, Fazer Mill & Mixes functions in the national food maintenance chain as a grain storage in possible exceptional situations. Even though grain is stored in big grain silos, Fazer Mill & Mixes is also able to trace every lot they use.
